Polka Dot Brownies Recipe


I just started to become interested in baking. I’ve tried bread, cornbread, Toll House Cookies and brownies. I found a good Brownie recipe in James Beard’s “American Cookery” and added white chocolate chips. I made these for a friends house warming party and everybody loved them.

Ingredients

4 ounces unsweetened quality chocolate (Ghirardelli)

3 eggs at room temperature

1/2 cup butter

2 cups sugar

1 cup white chocolate chips

1 tsp vanilla extract

1 cup sifted all purpose flour

1/2 tsp salt

Melt chocolate in a pan over very low heat. In a mixing bowl cream butter and sugar. Creaming butter and sugar is a process of mixing together with a mixer. Stir in melted chocolate and beat in eggs and vanilla with your mixer. Quickly stir in your flour and salt and white chocolate chips. Spread batter into a well greased and floured 8×10 or 9×12 inch baking pan. Bake at 325 degrees for 40-45 minutes. Do not over bake   Remove from oven and let cool. While still a little warm cut with a very sharp knife into squares.

Tip: If you don’t grease/butter and flour your pan; this is what happens. See photo below.

Tip: Use parchment paper in your pan instead of greasing and flouring your pan. The Brownies lift right out! 

Never drink Bourbon while you bake; I knew I forgot something. Always butter and flour your cake pans!

Toll House White Chocolate Chip Cookies With Ghirardelli Chocolate

Ingredients

2 1/4 cups all purpose flour sifted twice

3/4 cup butter or 1 cup at room temperature

2 eggs at room temperature

3/4 cup white sugar

3/4 cup packed brown sugar

1 tsp vanilla

1 tsp salt

1 tsp baking powder or baking soda

1 cup Ghirardelli White Chocolate Chips approximately half of 12 oz package

1 cup Ghirardelli Semi Sweet Chocolate Chips approximately half of 12 oz package

1 cup chopped walnuts, pecans or almonds (optional)

Tip: Take eggs and butter out of the refrigerator the night before you plan to make your cookies 

Preheat oven to 375 degrees

With your hand mix baking powder salt and flour. Using two bowls sift flour and baking powder. In a mixing bowl cream the butter, white and brown sugars. Creaming is simply using a mixer to beat the sugar and butter together until smooth. Creaming also incorporates air into the butter. Beat in the eggs and vanilla. Sift the flour, salt, and baking powder again into the the batter, then stir in the chocolate chips. You can use all or less of the chocolate chips; I don’t like too many chips in my cookies.

TipUsing parchment paper eliminates the need to oil or grease the pan

On a cookie sheet covered with parchment paper place 1 tsp of cookie dough allowing an inch between cookies. Bake for 8-12 minutes.

Remove and let cool.
