Crock Pot Sloppy Joes

I remember “Sloppy Joes” going back to my grammar school days back in the 70s and early 80s at Falconer school in Chicago. Sloppy Joes are the only thing Chicago public schools got right! All the kids loved “Sloppy Joes” washed down with chocolate milk. Recently I tried a recipe I found online for my crock pot; it was very good but you know I had to play with the recipe and come up with my own version.

3 pounds ground sirloin. Ground beef or chuck will work but has a lot of fat

1 large or 2 Medium onions finely chopped

1/2 cup green bell pepper chopped small

1 cup ketchup

1 6 oz can tomato paste

3 tbsp worcestershire sauce

2 tbsp brown sugar

2 tbsps smoked paprika or sweet paprika

1 tbsp chili powder

1 12oz can chopped tomatoes

1 tsp garlic powder

1/4 tsp black pepper

Salt to taste

Set crock pot too low, In a large skillet or dutch oven brown ground meat, onion and bell pepper. Cook until only fat remains drain off fat and add all remaining ingredients. Bring to a simmer and transfer your warm crock pot. Cook on low for 5-8 hours. After 2 or 3 hours taste and adjust for salt or other spices. If you mixture is too thin (watery) turn up the crock pot to high and let simmer uncovered to let the liquid evaporate. Turn the crock pot back to low for remaining time. Serve on large hamburger buns or sandwich buns. These are messy but quite worth it. Great for parties and very easy.
